Would I say someone should go around buying trinkets, certainly not, it's very conditional and even rather later in the game you want to save gold for armor and ability upgrades (weapons too sure). If you pack on food trinkets, then the hunger events don't mess with you as much, and you don't go through the food so fast when camping, which makes a signfiicant difference to getting the feasting healing and stress relief bonuses. If you're not packing a dedicated healer or your healer isn't that great, you pack more food, plus there's problems in longer dungeons with backtracking and hunger events. Then there's food trinkets, but the idea isn't to save on food costs so much, it just radically increases your range of viable parties. That can mean a big jump in your ability to survive higher level dungeons. You definitely can't go around just blowing gold on trinkets, but if you're looking at like a 40 stun bonus on plague doctor, it's worth thinking about if you've managed to upgrade nomad wagon, have a leveled plague doctor with stun skills. You pay the cost up front, get the benefits, the benefits add up. Buying trinkets is a pre-emptive measure.
